"A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. The thin mixture is absorbed into the outside of the sponge cake and left to set, giving the cake a distinctive texture.
Lamingtons are believed to be named after either Lord Lamington, who served as Governor of Queensland from 1896 to 1901, or his wife, Lady Lamington."

Was perfect!!!
Thank you so much for preparing the two beautiful Brazillian Lamington cakes for me at such short notice.
They were meant for my last day in the office today – and all my colleagues who had a slice – about 20 or so of them, had never eaten your cake - but they loved it!!
I really hope they all come to you for their future cake purchases, you deserve it – and your customer care was much appreciated by myself most of all.
Lots of love and good vibes to you all
The Brazilian Lamington was a hit. It was the first to be devoured.
An excellent recipe!
Brazilian Lamington (GF)
It has the moist and sweet darkness of a chocolate cake, the light body of vanilla cake, coated in the distinct flavour of coconut. A unique and delicious combination of flavours.
